If a bunch of tables leave at once, you're gonna have to hop from one server's section to the next ensuring that all the servers have the same chance at taking new tables.
The last thing you want to happen is that a server doesn't get sat because they have no clean tables. The sharper your sense of timing=the more extra stuff you can do=at least in my experience, more tips. Keep a mental timer going, especially if you're at a place that usually has at least one 8+ top at any given time. Pay attention to your servers and their tables. There's a good chance they might need you to prioritize bread and water, unlike my job. Or, when a server gets sat in the middle of doing something else like taking orders/greeting another table/convincing a tourist that they'll like Stella.
